Niigata Prefecture produces the best rice in Japan. The Ito Family were wealthy farmers from Niigata and one of the largest landowners in Japan. At New Year or festival times they were in the habit of making mochi (sticky rice cakes.) During busy periods they used to make so much that one person could not manage, so the Ito Family tradition was to have 3 people making the mochi together. You can experience this technique passed down from the Itos and make mochi with an expert. Freshly made mochi is a real treat, and you can enjoy it after your exertions.
